A couple of days ago, our neighbour gave us 2 mangoes from their garden. I’m a big fan of mangoes, and would rather eat the fruit itself. But these riped mangoes were reeeeaaaaallllly sour, that they were just left on the table. But why waste something if you can make it better?
So yes, I made mango jam 🙂
Mango Jam Recipe
2 riped mangoes, cubed
1/4 cup water
1 cup sugar
lemon zest
Simply boil the water and sugar, add the mangoes and zest and boil. When you think it’s done, do a small test. Place the jam on a cold plate, and place it in the freezer for a minute. Use your finger to push slightly to see if it sets.
When ready, transfer to a jar, and chill.
Serve with bread, scones, anything!
I like this picture with the reflection of the bread in the jar hahaha.
And split half a vanilla pod and placed it in the jam at the last minute.
