Matcha Castella

This has been on my to-bake list for the longest time, ever since i saw it on Ju‘s blog. What actually caught my eye was how pretty and perfect it looked! AND IT DOESNT REQUIRE BUTTER. Haha, doesn’t that make you feel better?

I gave the castella cake a little twist. Especially when i didn’t have any honey on hand, i replaced it with my favourite matcha 🙂

8 eggs
300g sugar + some to sprinkle
200g (7 oz) all-purpose or bread flour (I used all purpose)
1/2 cup milk
4 Tbs. honey, plus one extra Tbs. for the top (I replaced this with 4 tbsp of matcha powder!)

If you have time on hand, and a need for exercise, this is the recipe for you 😛 Because this requires whisking the eggs and sugar over heat until soft peaks form.

Unfortunately, i don’t have a hand mixer (a great excuse to get one) so i whisked by hand. It took me a good hour to 75 mins of non stop whisking until i got the desired consistency. All you do next is add in the milk and honey. Lastly add the dry ingredients. Do this is small quantities because you don’t want pockets of flour.

For this recipe that i tweaked (because i didn’t have honey), i just replaced the honey with matcha powder. You can add the honey if you want the honey taste! But without the honey its already sweet enough. So you may want to cut down on the sugar if you’re planning to add the honey. Personal preference, really.

This cake is perfect with coffee or tea. At first bite, i fell in love with the velvety and smooth texture. Do visit Just Hungry for more detailed instructions!

  1. I don’t think I could stand whisking anything for 10 minutes, what more 75 minutes but from the look of your cake, it looks well worth it!
