Last weekend, i had friends over for dinner. It was something decided last minute. As always, i’m in charge of the dessert! Had many apples at home.. So why not an apple tart?
..with a scoop of freshly churned icecream?

250g plain flour
100g butter, cubed and slightly softened
100g icing sugar, sifted
Pinch of salt
2 eggs, at room temperature
Mix the flour, icing sugar and salt together. Rub in the butter with your hands until it becomes grainy – something like breadcrumbs.
Make a well in the middle and crack the eggs. Work the eggs into the dry ingredients until it become a smooth dough. Wrap it up and refrigerate until firm (about 1 to 2 hours) before using.
Roll out the Pâte Sucrée till it’s about 3mm thin. Because of the weather (bummer i know), my Pâte Sucrée became limp really quickly, so i couldn’t roll it too thin if not i’m not able to even lift it up! Laid it over my 11″ pan and cut off the edges. Use a fork and poke some holes at the bottom.
Lined the Pâte Sucrée with baking paper and filled it with dried beans as paper weight. This is so that it cooks evenly and doesn’t pop up! Baked it at 180C for 20 mins. Removed the beans and baking paper, baked it for another 15 mins. Now egg wash it and bake for another 5 mins!
I cored and sliced about 5 apples. Didn’t skin the apples because i wanted the pretty red to be seen 🙂 I used the ends of the apples (which were kinda hard to slice thin!), cubed it and used it to make an apple compote. That made up about a third of my apples.
Can’t give you guys exact measurements.. But it’s really up to you how sweet you want it. Just cook the apples in a saucepan with some sugar and throw in a split vanilla bean. Cook until apples are soft and golden. Remove the vanilla bean and cool.
Spread the apple compote evenly in the tart. Then arrange your apple slices! You may glaze the apples with simple syrup (equal amounts of sugar and water boiled together) and bake the tart for one last time. 170C at 30 mins.
And maybe with a scoop of vanilla icecream!
Have never had an apple tart with so much apples before! Was very pleased with how it turned out. The only thing that upset me how was thick the Pâte Sucrée was 😛 Whoops. Made it a little tough to cut it. Other than that it was good.
