So i made milk tea icecream 😉
I basically edited the recipe from my vanilla bean icecream post.
Milk Tea Icecream
2 cups milk
Some black tea leaves
6 large egg yolks
Some condensed milk
2 cups heavy cream
I boiled the milk with some black tea leaves. Depending on how strong you like your milk tea icecream to be of course. I added about 8 tablespoons? Haha, you may want to leave it overnight for it to infuse into the milk.
In a separate bowl, whisk the egg yolks and condensed milk (depending how sweet you want it to be) together. Then whisk in the heavy cream. Start heating the milk on low. Constantly whisking, pour in the egg yolk mixture in a steady stream.
Don’t let it boil because you dont want it to curdle! It should start to thicken – thick enough to coat the back of a wooden spoon. Chill the mixture in a bowl. When totally chilled, churn in your icecream maker according to the manufacturer’s instructions.
Starts off as a really runny mixture.
After about 15 mins there was some changes!
Nice and creamy 🙂 When thick, transfer to a container and leave in the freezer and let it firm up.
