Two days ago my aunt brought back a punnet of blueberries. That got my sisters giving me ideas on what to bake. So many possibilities. Was deciding between a souffle, muffins and cobblers. Woke up yesterday morning and made these awesome muffins!
Blueberry Streusel Muffins
Recipe from Taste of Home
1/4 cup butter, softened
1/3 cup sugar
1 egg, beaten
1 teaspoon vanilla extract (I used vanilla beans)
2-1/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1-1/2 cups fresh or frozen blueberries
1/2 cup sugar (I used brown sugar)
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter
Cream the butter and sugar
And the vanilla
In a seperate bowl, sieve the dry ingredients together.
Alternate adding the dry ingredients and the milk until all is added.
Fold in the blueberries!
Now for the streusel 🙂
Rub the butter with the dry ingredients with your fingers.
Fill the cups with the muffin batter about 3/4 way up. And sprinkle the streusel over. I went to spread the streusel over though. looked neater and had an even crust over the top of the muffin after it baked. Prefer it that way! Left a few without the streusel.

I must say i really like this recipe! Brought it to school for breakfast yesterday. Heh.
