Blueberry Streusel Muffins

Two days ago my aunt brought back a punnet of blueberries. Β That got my sisters giving me ideas on what to bake. So many possibilities. Was deciding between a souffle, muffins and cobblers. Woke up yesterday morning and made these awesome muffins!

Blueberry Streusel Muffins
Recipe from
Taste of Home

Cake
1/4 cup butter, softened
1/3 cup sugar
1 egg, beaten
1 teaspoon vanilla extract (I used vanilla beans)
2-1/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1-1/2 cups freshΒ or frozen blueberries

Streusel
1/2 cup sugar (I used brown sugar)
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter

Cream the butter and sugar

Beat in the eggs

And the vanilla

In a seperate bowl, sieve the dry ingredients together.

Alternate adding the dry ingredients and the milk until all is added.

Fold in the blueberries!

Now for the streusel πŸ™‚

Rub the butter with the dry ingredients with your fingers.

Fill the cups with the muffin batter about 3/4 way up. And sprinkle the streusel over. I went to spread the streusel over though. looked neater and had an even crust over the top of the muffin after it baked. Prefer it that way! Left a few without the streusel.

I must say i really like this recipe! Brought it to school for breakfast yesterday. Heh.

    So, it’s true – great minds do think alike! Except you used blueberries, I used bananas. Hehe.

    Where do you get your vanilla beans, dearie? I think your muffins will taste awesome with the real stuff.

      the one at holland v since i live nearby.
      now i’m using the ones from australia which my friend mailed back for me!

    IMHO, blueberries taste better when baked than eaten fresh! And I always make the same streusel topped blueberry muffin whenever the berries is on offer.

    It’s a shame that blueberries are so ex here!

      the aroma and taste comes out after baking!

  3. Tried the recipe this morning…muffin looks and taste nice but the texture is quite dense. Wonder what I did wrong…not enough egg or too much handling? What do you think?

    • if you ask me, i’d think its overmixing! try not to mix too long.
      stop when its just incorporated.
      i think sifting helps too. helps with the air in the batter.
      buttermilk is important.
      never replace it because it helps the fluffiness and moisture.
