Once you start, you can’t stop! Sorbets are really addictive to eat, and make! I used peaches this time!

Blend those peaches!
You still use the same ingredients! But in different proportions this time.
Note: You may notice that the proportion of fruits to syrup and lime juice is larger this time! This is because peaches have a higher water content compared to that of berries! That’s why i put in more peaches. In fact, i may just cut down on the syrup even more the next time.
If you were to stick to the berries sorbet recipe and just replace it with peaches, the sorbet will turn out too icy and freeze hard. I’ll have to experiment with the proportions more
Anyway..

Blend the simple syrup, lime juice and peaches together. I only removed the seeds and not the skin because i wanted to keep the fibre and add colour to the sorbet!
You can use different kinds of peaches. Not sure where the peaches i used came from.. But there are definitely other peaches which give nicer colours.

After chilling in the refrigerator, churn it in your icecream maker and follow the manufacturer’s instructions until you get a nice sorbet consistency!

Scoop into the container and freeze to set.
Peach Sorbet
3/4 cup simple syrup (equal parts of sugar and water, heated together)
800g peaches
1/4 cup lime juice
Again, for those who don’t have an ice cream machine.. You can make sorbets without an icecream machine! Place the mixture in a cold bowl, a metal bowl maybe, and freeze for an hour or so. Beat with a whisk or just mix it around a bit then return to freezer. Repeat this step at least 3 times hourly until you get the sorbet texture.
